  • Tiger's Eye Bean (Phaseolus Vulgaris); An ancient variety from South America (Chile or Argentina), bushy in shape, low water requirements, and moderately productive. It can be eaten green as a green bean, but is best dried. It holds up well to cooking and has a vibrant flavor, making it ideal for dishes like chili or refried beans due to its firm texture. It matures in about 80 days from transplanting.
    We are also experimenting with this bean in dryland cultivation, with good results.
