Cicoria Catalogna and Puntarelle

The Catalonia chicory or Asparagus chicory is an ancient selection derived from wild chicory. The main feature is the highly developed floral stalks that create an erect head. It is a typical cut vegetable from autumn/winter, with a characteristic bitter taste. In some varieties the head, composed of sprouts, is very fleshy and compact, we are talking about the famous "Puntarelle", here in two versions: Galatina and Gaeta.
