Wood Sorrel (Rumex acetosa): also known by the French name Oseille, is a herb of acid, fresh taste used for many recipes, from sauces to fish, especially salmon: its acidity provides balance to fats. Very easy to grow, rustic and requires practically no care at all. Sowing from March, during winter, only the epigeal area remains which will return to vegetative state in spring.
