  • Baby Corn (Zea mays): Most people have only seen baby corn in sad jars, pickled or brined. Forget all that. Baby corn is an exceptional product. After just over a month, you'll begin to harvest an incredible quantity of small (pardon my mistake) white, tender cobs*, up to 40 per plant. They can be eaten in a variety of ways, from roasted to soups and fresh in salads. They taste like corn soaked in milk, and are delicious. They should be harvested continuously so that the plant always produces new ones.
    Let some go to collect seeds or make the smallest popcorn ever seen.
