Wild Chard (Beta vulgaris)
Wild Chard (Beta vulgaris): one of the species that has accompanied man in the transition from gatherer to farmer. Very rustic, it grows throughout the national territory, similar to the cultivated chard but the plant is smaller and more compact, the leaves have a slightly sharper shape. The taste is sweet and intense, it also depends on the time of harvest: the closer to the heat, the more leathery the leaves will be and the less appealing too. During the winter harvest the outermost leaves should be cut so as not to damage the plant and have a longer harvest. Wild chard is a "cutting chard" that is, the leaves are consumed, there are many recipes, but even the simplest ones will provide a lot of satisfaction.
Why grow a wild plant if it can be found on any field? Mainly because people often don't have time to go looking for it, because it is easy to grow even in pots, because it contributes to repopulation, because they are very good and it is nice to have them on hand.
