Baby Milk Choy (B. rapa sub. chinensis): a real gourmand bok choy, small, with a very white stem, the leaves resemble a fungus. The texture of the stem is crunchy but tender, fleshy and savoury. The delicate, fleshy and sweeter leaves create a fabulous contrast.It
is consumed fresh, sautéed or even grilled, there is no need to separate the stem from the leaves as it is done with the larger bok choy. Very simple and fast
cultivation, including the sowing it will take about a month and a half to be on the table.
It starts producing seeds above 26° C, it suffers frost but it can be grown at around 7° C, maximum growth after 15° c. A rarity
not to be missed in Europe, only with us.
