Umbrian Cannellino (Phaseolus vulgaris): an ancient Umbrian variety sent to us by a friend of the association a few years ago. The plant's characteristics are those of the white cannellino: bushy, low water requirements, and early, with harvest beginning just over two months after transplanting. The skin, a deep, dark hazelnut color, is thin, and the consistency when cooked (which must be done quickly) is creamy, with a delicate flavor. We emphasize the variety's hardiness; it can be grown even in terrain difficult for legumes.
