  • Tuscan Violet Artichoke (Cynara scolymus): The Val di Corni Violet Artichoke is one of the finest cultivars, a typical product of the coastal area, particularly the Livorno coast, grown in the Val di Cornia and Venturina. It is particularly used in the area for preserving in oil.

    Artichokes don't like extreme climates; intense cold can damage the plant. Being a perennial, it should be planted in full sun. Plants live about 10 years, although after about 5 years, it's best to replant them. After pruning, as described below, plants can be propagated by expanding your artichoke patch year after year. When temperatures are too high or the climate becomes dry, artichokes go dormant. Increase water availability to "wake" the plant up before harvesting. When the plant is not dormant, regular irrigation is recommended.
