Sarno Broccoli Cabbage (Brassica oleracea)

Sarno Broccoli (Brassica oleracea): Also known as Christmas broccoli, this is another Neapolitan specialty. The large plant produces many branches, which develop early into numerous medium-sized, compact, and beautiful green florets. It matures gradually. Sarno broccoli is an excellent alternative to the more cultivated Calabrian variety. It differs from the latter in its bolder flavor, the tendency of its florets to regrow, and its more ancient history. Its gradual maturation makes it less suitable for commercial use and therefore less cultivated. It is used in many traditional recipes.
