  • Suyo Long cucumber (Cucumis sativus): is a variety of cucumber   Native to Asia, particularly China, where it has been cultivated for centuries for its exceptional length and delicate, non bitter taste. The fruits are easily recognizable by their elongated, slightly twisted shape , which can reach up to 40-50 cm long. The skin is dark green, thin, with slight ridges and sometimes small thorns, easy to remove even with a cloth.

     In the kitchen, the Suyo Long cucumber is prized for its crunchy, juicy, and sweet flesh , completely devoid of the bitter aftertaste that can characterize some common varieties. It is ideal for eating raw in salads , but it is also well suited for making pickles , which is one of the main uses in its native lands.
