  • Chicory from Soncino or Scorzamara (Cichorium intybus): this root variety from Sunsì in Lombardia, is slowly disappearing. Until the 60s it was widely present in typical preparations such as the famous risotto with roots, then its demand decreased more and more which led to the abandonment of its cultivation. For some years now, the renewed interest in ecotypes and biodiversity has led to its return to vegetable gardens.
