Wild Chicory (Cichorium intybus)
Wild Chicory (Cichorium intybus): found in the countryside, not to be confused with Dandelions, perennial plants, bitter, and very tasty. There are many spontaneous varieties on the site because growing in fields, people often don't have the opportunity to collect them, or they go unrecognised; so maybe if available on hand, they can become popular. The spontaneous varieties are the summit of sustainability; rustic by definition, often perennial and prevailing on the competition with other varieties, almost zero water needs, and great nutritional properties. To be sown in spring.

*= Very low, does not require irrigation
**= Low, also suitable for hot and arid areas, water only in case of prolonged drought
***= Reduced, one of the least demanding varieties of the species, suitable for areas with sporadic rainfall, irrigate only in case of prolonged drought
****= Tolerant to water stress, requires moderate irrigation, suitable for low-water consumption gardens.
Unfortunately, until the guide is published, this is just a rough guideline to avoid confusion. Dryland farming requires cultivation techniques suited to the soil and soil conditions. All varieties have been acclimated in Italy.
