Japanese Cosmos Kagayaku Kiiroi (Cosmos sulphureus): is a highly valued ornamental and edible cultivar that perfectly embodies the refined harmony of forms and colours characteristic of Japanese aesthetics. This variety stands out for its generous size and the extraordinary luminosity of its flower heads, characterised by a broad, pure white corolla surrounding a central disc of delicate yet intense pale-yellow tones.

The plant develops a vigorous, upright habit with considerable visual impact and can easily exceed one metre in height when grown in the ground, forming a dense floral display covered with luminous blooms. It also adapts exceptionally well to container cultivation on terraces and balconies, where it maintains a more compact and contained form while retaining its remarkable ornamental and productive qualities.

Botanically belonging to the Asteraceae family, this annual species has a slightly later development cycle than other varieties of the genus Cosmos. The additional few days required for the first flower buds to appear and for the subsequent maturation of the cypsela, or seed, are amply rewarded by an exceptionally long, abundant and persistent flowering period.

Beyond its undeniable ornamental appeal, Kagayaku Kiiroi also has an interesting role in contemporary gastronomy and botanical mixology. Its fully edible flower heads offer a distinctive sensory experience: on the palate they reveal a subtle, stimulating spicy note, followed by a fresh citrus character and a deeper aromatic finish with nuances reminiscent of marigold.

The petals are particularly prized for adding colour to fine-dining dishes, gourmet salads and refined pastry preparations. In the beverage sector, the flower heads can be used for cold infusions and for making syrups, artisanal bitters and botanical spirits, releasing natural pigments that can lend beverages elegant golden hues, accompanied by a fresh and persistent aromatic bouquet.
