  • Risi Beans (Phaseolus vulgaris): "Fasuli Risi" are also among the PGI cultivars of Sarconi (Basilicata). The bean is completely white; this cultivar is particularly important because it is one of the oldest. This is evident in the kitchen, thanks to its intense flavor and creamy texture, combined with its thin skin that aids digestibility and shortens cooking times. In the kitchen and in the garden, this variety is among the best; in addition to its excellent flavor, the plant is undemanding and very hardy, selected during difficult times and in a harsh climate. The name likely derives both from its similarity to rice and from the fact that it was often used as a source of carbohydrates in place of pasta and rice. Extremely high quality.
