Mung Bean (Vigna radiata): An ancient bean native to Asia, now cultivated worldwide. The seed is small and dark green. The plant has a bushy growth habit, reaching a height of 90 cm. It is highly productive, but the pods ripen unevenly; they are harvested when they turn from green to brown, starting 75 days after transplanting (about 90-100 days after sowing). These small mung beans have a very high protein content, around 30%, and are used as animal feed. Mung beans are also prized for their sprouts; often, when asked for soybean sprouts at restaurants, they are actually this ecotype.
