    Verdolino Bean (Phaseolus vulgaris) : Another Italian delicacy from Lucania, the name derives from the color of the seed, a beautiful light green. The Verdolino bean has a distinctive flavor, between the sweetness of the cannellini bean and the intensity of the borlotto bean, from which it inherits the not-too-thin skin that makes it suitable for soups. It pairs well with fish, thanks to its delicate flavor and its ability to hold its shape after cooking. The plant is dwarf, easy to grow, and does not require support. Sow in spring, harvest in about 70 days.
