Cherokee White Eagle Corn (Zea mays var. indentata): This ancient and rare variety It is the first registered in the Cherokee Germplasm Bank. The kernels are distinctively white and blue (sometimes some "cobs" are completely this color), and the flavor is similar to that of the oldest blue corn varieties, sweet and intense. It is a firm corn, rich in starch, used primarily for tortillas. The name comes from the inclusions of blue in the kernels, which sometimes resemble an eagle (White Eagle is actually translated as "white eagle").
The plant reaches three meters in height, producing two or more ears (panicles) about twenty centimeters long, squat, and with large kernels. The minimum growing temperature is 20°C, and ripening takes about 110 days from sowing. A variety to consider for professionals and culinary enthusiasts.
