  • Hopi Pink Corn (Zea mays) : A very rare corn grown by the Hopi natives, the People of Peace. This protein-rich corn produces a highly prized flour. The cobs* (actually ears) are large, up to 25 cm long. The beautiful color of the seeds varies from white-pink to deep pink. Selected by the most important tribe of indigenous Amerindian farmers to be grown in a semi-arid soil and climate, it is among the flour ecotypes with the least water requirements. Perfect for the climate of central and southern Italy (acclimated in Lazio, 2011 is the tenth year of cultivation). Its beautiful flour and low water requirements make it a particularly important ecotype.
