White Eggplant with a Pink Shade (Solanum melongena)

Round Pink-Stained Eggplant - Rome (Solanum melongena) : ancient Italian variety from Lazio, with numerous large, slightly ribbed, white fruits with pink streaks.

The white flesh has a more delicate and sweet flavor than common aubergines, making it suitable for many preparations without having to use traditional methods to remove the water and therefore the bitterness.

It is a variety widespread in the Pontine Marshes where it was probably selected; there are reports of it from the middle of the last century in the areas between Rome and Latina.
