Japanese Pickling Eggplant (Solanum melongena): an ancient Japanese eggplant, among the best we've tasted and grown. Its fruit grows up to 40 cm long, with firm, sweet flesh and a diameter of 3/4 cm. The skin is a beautiful, bright purple, particularly thin and shiny. You'll be amazed by its perfectly balanced bitter and sweet flavor in any recipe, from pasta sauces to fabulous caponata. Japan, after all, offers us many extraordinary varieties; the extreme care in selecting ecotypes with excellent organoleptic qualities places this country at the pinnacle of world cuisine. Like all eggplants, the planting temperature must be maintained at 24°C; while during the vegetative stage, it is not particularly susceptible to drops in temperature. The plant is not particularly productive, but we still recommend supporting it due to the size of the fruit. It stores well after harvest.
