  • Round Florentine Violet Eggplant (Solanum melogena) : The "Florentine Violet " or " Florentine Round " (due to its round, flattened fruits) is an ancient Italian variety. The plant doesn't produce a large number of fruits, but they are quite large, weighing up to seven hundred grams or more. The quality of the flesh is crucial. When cut, it oxidizes little, remaining pale, and once cooked, it has a particularly delicate flavor, free from pungent or overly bitter flavors. Its texture also makes it a prized variety: firm but not tough, it holds up well to demanding cooking without falling apart, yet remains tender even when cooked more quickly, such as frying. Growing is simple and doesn't require much attention, always remembering that rich soil certainly improves its flavor. It's a good idea to support the stem to prevent the weight of the fruits from breaking the plant. Plant spacing should be approximately 60 cm and row spacing should be 1 meter. Ready for consumption approximately 60 days after transplanting. To harvest the seeds, leave the fruits of the best plants to ripen well, approximately 80 days after transplanting, depending on temperatures.
