Yellow Heart Winter Pak choy (B. rapa var chinensis): this variety guarantees there is pak choy in the garden and on the table even if winter is particularly harsh, it does not suffer snow and frost.
The stems are compact, numerous and fleshy, like the leaves themselves.
However, it hides a surprise: inside the stem there is literally a heart of gold, a rosette of tender, crisp and sweet yellow leaves. Three textures, three colors, and three flavors can be obtained from each plant.
The growth, like all Pak choy, is fast, as mentioned, it does not fear the cold, but the heat: it should not be sown after February.
There are not many varieties that can be grown in winter where frost and snow rage, in the mountains of China, where the selection has been developed, it is grown precisely to provide the nutrients of the freshly harvested product in places where it would not be seen for months.
