Challuaruro Chili Pepper (Capsicum baccatum)
Challuaruro chili pepper (Capsicum baccatum): the constant search for the most significant and local varieties, from Italy and around the world, has led us to discover authentic wonders, unknown flavors, and new sensory experiences: this chili pepper is a prime example. Of course, we have rarer varieties, but the Challuaruro fully embodies the essence of its homeland, Peru and its mountains: " mi cordillera es la espina dorsal del planeta" ("My mountain range is the backbone of the planet"), as a famous song goes.
The plant is vigorous, reaching a height of 1.2 meters, and produces a massive and beautiful harvest: the berries are initially white with intense purple hues, then turn yellow as they ripen. The flavor is sweet and sour, pleasant, discreetly spicy, yet extremely fruity; all the chefs who visit us are enchanted. It is used raw in leche de tigre for ceviche (marinated raw fish), or cooked in sensational sauces.
