  • Yellow Asti Square Pepper (Capsicum annuum) : A variety that spread from Provence to the Turin area, more specifically to the municipality of Motta di Costiglione d'Asti, where it is mostly grown. It is a four-lobed pepper (the bottom of the fruit has four lobes, hence the typical name), large, flavorful, and very early to maturity. The plant is productive and vigorous, so consider this when planting, allowing at least 1 meter between rows and 50 cm between plants. It is grown with support due to its high yield. Excellent baked or stuffed, it comes in two bright, uniform colors: yellow and red. Please note: Asti pepper seeds are readily available for sale, but to be propagated, they do not need to be F1 (like most you will find).

  • This pepper comes from Southern Provence where the fruit was called “pèbroun” from which the “povron” in the Piedmontese dialect.
    Being able to fluently pronounce the phrase “ Dui provron bagnà 'nt l'euli ” (that is: “Two peppers dipped in oil”), without making our grandmothers turn up their noses was considered a passing test in dialect and this probably led us to consider the pepper, so representative of the typical preparations of Piedmontese gastronomy.
