Lombardy Cigarette Pepper (Capsicum annuum): This sweet and flavorful variety can be eaten sautéed—it's delicious—but its true purpose is preservation: it lends itself very well to pickling or brining. The plant grows about 70 centimeters tall, and the numerous berries grow to a length of 15 centimeters. They are tapered and pale green (hence the name "blond pepper") until ripe, when they turn a bright red.
For their light and balanced flavor, they can also be paired with delicate meats and fish. An excellent variety for expanding the flavor palette of your capsicums.
