  • Padrón pepper (Capisicum annuum): This pepper, famous throughout Spain for its flavor, grows in the town of the same name in Galicia, near Santiago de Compostela. Frequently used as an ingredient in tapas, it has an intense flavor and a distinctive characteristic: sometimes it's spicy, sometimes completely sweet.
    This depends on the soil and climate of the growing area.
    The plant is vigorous, reaching a height of over 80 cm. It is very productive, producing peppers about 6-8 cm long, an inviting light green, sometimes tending towards yellow. They are best eaten immature, before they turn red, when you can then harvest them for seed. It is undemanding regarding soil quality, and does not require nitrogen fertilizers, which increase its vigor at the expense of yield. It tolerates low temperatures very well, and in the South it will remain productive until late November.
    Grow it, sauté it on summer afternoons with a good bubble.
