  • Canestrino di Lucca tomato (Lycopersicon lycopersicum): an ancient and important Tuscan variety registered in the biodiversity register of this region. Its name derives from its "basket" shape, but the Canestrino tomato is also recognizable by the green color of the top of the berry, which persists even when fully ripe, and by the presence of small cracks just below the stem attachment: aesthetic imperfections that can be considered a sort of trademark.

    The flesh is soft, firm, slightly watery, and has few seeds; the skin is thin. Size varies greatly: the berries weigh about 150-200 grams, but can reach 300 grams. The flavor is sweet, due to the high sugar content and low acidity. When fully ripe, it's excellent in salads, thanks to its intense aroma, bold flavor, and firm flesh, but it's also suitable for making fresh sauces and preserves, given its low water content.
