Egoma - Green Shiso (Perilla frutescens var. frutescens): This is one of the oldest varieties of Shiso. Perilla was originally used primarily to produce oil from its seeds. Its use was primarily medicinal and cosmetic. Later, it also became successful in cooking, and this likely began the selection program that led to cultivars (Jeok SSam IP and Tia TO) and varieties (Japanese Shiso var. crispa), although some sources indicate the latter's origins are in India. Egoma is distinguished by its large, white seeds, about six times larger than other varieties. It is precisely this characteristic that makes them suitable for oil production, which is still used today for the same purposes as in ancient times. In the fields, the plant is vigorous, reaching up to two meters tall.
The plant is rustic, early, and very productive. It requires well-drained soil rich in organic matter. It should preferably be planted in partial shade. This is the shiso variety least suited to pot cultivation.
Although the primary purpose is seed production, the leaves can be used in cooking, but you'll find less complex flavor and a slightly tougher texture. Oil extraction can also be done at home, with a yield of around 20% of the seed weight.
