America Spinach (Spinacia oleracea): ancient variety of high quality, the plant produces large leaves, fleshy, with an intense green, but the main characteristic is another: it is resistant to drought and tolerates high temperatures before producing seeds (which determines the end of the vegetative phase and the plant) it allows for year round cultivation, avoiding sowing in the two hottest months of the year. In the kitchen it can be used in many ways, it was selected for the American preserve industry in the first half of the 20th century. Temperature resistance slows the growth a bit: harvest takes about 60 days from sowing. Temperatures must not be less than 2°C.
