Dandelion (Taraxacum officinale)

Dandelion (Taraxacum officinale): This wild plant, found throughout Italy, has many common names: dandelion, puffball, wild salad, or dandelion. The entire above-ground portion is edible, both leaves and buds. In the past, its consumption was widespread, but now much less so. It is easily found in fields up to 2,000 meters above sea level. The seeds are primarily used for urban cultivation: it is, in fact, an excellent plant for attracting bees and pollinators. Sow in March in a seedbed.
