  • Yanagawa Takana (Brassica juncea): this"mustard" from the prefecture of Fukushima is one of the most delicate ones, the taste is sweet and the spicy is barely perceptible, yet persistent, it is the representation of the oldest Japanese selections: balance and nuances, decisive with  delicacy. The leaves are large and fleshy, the stem is fine, it is also beautiful to see.
    It is grown in spring and autumn, produces seeds above 26°C, it means until late spring. It resists even intense cold but not for too long periods, It grows quickly, it is ready in 50 days from the transplant, for this you need a well fertilized soil.
     Given the Yin nature of this mustard, it goes well with a Yang type cooking: sauté it on high heat with garlic and soy, exceptional.
