Yanagawa Takana (Brassica juncea): this"mustard" from the prefecture of Fukushima is one of the most delicate ones, the taste is sweet and the spicy is barely perceptible, yet persistent, it is the representation of the oldest Japanese selections: balance and nuances, decisive with delicacy.
