Green Ayote Squash (Cucurbita moschata): From Mexico A very special squash, the star of many traditional recipes but also well-suited to creative and contemporary cuisine. The small fruits, weighing up to a kilo, have a very thin skin and a unique pulp: a deep green color with a delightful flavor ranging from nutty to herbaceous. It can be eaten even when immature, and the pulp has a creamy consistency. It's delicious raw, without removing the skin, which is also edible. It can also be dehydrated for chips with a unique color and incredible flavor. For purists, you'll find fabulous traditional Mexican recipes online.
Cultivation is simple, it is a not very vigorous plant, exceptionally rustic, not very prone to fungal diseases.
It is sown in the south until the end of June.
The only flaw is that it doesn't keep long after harvesting.
