Long Neapolitan Squash (Cucurbita moschata): Also known as the "cucozza squash," this traditional, large, and delicious Neapolitan squash is included in Slow Food's Ark of Taste. The fruit has a characteristic clavate shape, orange skin with green streaks, and can weigh over 30 kg and be over 1 meter long. The orange flesh is sweet and aromatic, not very fibrous, and suitable for a variety of recipes, from the very traditional " Pasta with Pumpkin" In cream soups, roasted with garlic and chili pepper, it's still found in soups and even in preserves. The "cocozza" has been replaced over time by varieties more suitable for large-scale distribution. In the last century, it was also grown in the Pontine Marshes, but its range has shrunk significantly.
