Shishigatani squash (Cucurbita moschata): A true rarity from 19th-century Japan: a small squash with a huge flavor. The fruits are hourglass-shaped, with warty skin, deep green when developing and turning a beautiful pink when ripe. The flesh is firm, slightly fibrous, sweet, and has a hazelnut-like flavor. This squash is widely used in shojin ryori cuisine. traditional Buddhist vegetarian.
