Violin squash (Cucurbita moschata)
Violina Squash (Cucurbita Moschata): An ancient cultivar grown primarily in the Ferrara area, it takes its name from its shape, which resembles a musical instrument. It is characterized by an elongated, hazelnut-yellow fruit that is slightly constricted in the center. The skin is wrinkled and has shallow longitudinal ribs. Both the plant and the fruit are of the "butternut" type. It weighs around 4 kg. The pulp is orange in color and has an excellent flavor, making it the star of the kitchen, excellent for tortelli, risotto, gnocchi, creams, and soups. The squash can be eaten baked or mixed with other vegetables, accompanied by barley or spelt. Pumpkin can also be used to make cakes, biscuits, and an excellent pumpkin jam with sugar (300 g per 1 kg of pumpkin), lemon juice and zest, cinnamon, and nutmeg.
