Romanesco Squash (Cucurbita pepo)
Romanesco Zucchini (Cucurbita pepo): Intense flavor and crispy skin, highly productive in both flowers and fruit: this Lazio zucchini will bring you great satisfaction, both in the garden and in the kitchen. Harvest when it reaches 15 cm. To reproduce seeds, leave the fruit to mature (about 3 kg for this zucchini). It has a bushy growth habit; plant 90 cm apart and 90 cm between rows. The flowers are excellent battered, and this zucchini can be eaten in a variety of ways, from sautéed to boiled. Its flesh retains its firmness even after cooking, although in many recipes, the peel is used for its unique texture and flavor.
