  • Silver Edge Squash - Pipian (C. argynosperma): Squash is one of the most important crops in the Americas, along with corn and beans. Cushaw squash (Cucurbita argryrosperma, such as Calabasa de Las Aguas ) is believed to have been domesticated in Mesoamerica from Cucurbita sororia about 7,000 years ago. Cushaw squash are unique because they are generally grown primarily for their seeds. The flesh of some varieties is also edible and can be used as a summer or winter squash. Silver Edge squash gets its name from the large seeds that have a silver "frame" on the seed coat. These seeds are eaten toasted as a snack, called pepitas. Toasted and ground, they are an ingredient in Pipian sauce, a type of green mole. The hulled seed is indeed this color and has a flavor reminiscent of dried fruit, which is very interesting. The flesh of this variety, however, is not particularly appetizing, but it can be eaten like a zucchini if harvested in the early stages of fruit development. The plant is rustic, not particularly vigorous, and very productive. The fruits are small, around 2 kg, and are distinctively colored like the seeds: white with silver streaks. Planting and cultivation are similar to other squashes; trimming can be avoided, and it doesn't require particularly rich soil due to the small size of the fruit and the uneatable flesh. Water requirements are average. Ready in about 110 days from transplanting. For cooking enthusiasts.
